Crunchy Gizdodo

Since valentine day is guaranteed to be a date night, I decided to cook my own valentine lunch for my family. Here is a crunchy Gizdodo, so easy to make. Follow the recipe as well as the pictures.

Ingredients

3 cups gizzard (chopped)

4 ripe plantain

2 big yellow onions

2 hot scotch bonnet peppers chopped

1/2 white cabbage (chopped)

4 sweet red peppers

Enough oil to fry the plantain

1/2 cup of olive oil

Knorr cubes

Salt to taste

1 tablespoonful of tyme

1 tablespoonful of curry

Preparation

First cook the gizzard and chop into pieces, fry for 2 mins in hot oil (I add onions, scotch peppers, salt and knorr cube and cook in my pressure cooker under chicken setting). While this is cooking, chop all the vegetables and set aside.

Cut the plantain in cubes and fry in hot oil and set aside. Then heat the oil and add the onions and scotch pepper, sauté for 2 mins, then add the cabbage and red peppers, including the tyme and curry, sautéed for 4 mins, add the dodo and gizzard with the broth to the pan, cover and let it simmer for 5 mins until most of the broth has been drained by the plantain. Remove from heat and serve immediately with barley.
